Soy is a subtropical plant, native to south eastern Asia. The parts of the plant used are the whole bean which is high in protein and is used widely in foods either as a bean, or processed into foods such as miso, tofu and tempeh. Soy lecithin can be extracted from Soy beans, as can Soy oil which contains phospholipids. Soy has been shown to have a very high concentration of isoflavones, especially genistin and daidzin.
